Coconut salad? I know, sounds crazy right? Let me tell you how this happened. Well never mind, it doesn’t matter. Just know that it is super flavorful–especially with sweet grapes, and salty feta!… (how this happened: I had leftover shredded coconut from the pie that I made). I was really surprised by the taste actually. All of the ingredients work well together. Who says salads are boring?! So the opposite. I got half the recipe from the wholefoods blog. I was wondering how to make a grape salad interesting–and duh add feta cheese lol. I love a loaded salad–I’m talking nuts, seeds, fruits, anything I can find in the kitchen so if you’re like me a little coconut will excite you.
I have been on the anti-aging bandwagon for a few months–partly because I turned 27 a few months ago. I am trying to keep wrinkle free skin for as long as I can so red grapes are a must. I really do need to eat at least two handfuls a day, but what usually happens is I go to the grocery store to buy them, and buy everything but grapes. It’s weird. And I love grapes! They are just not something I buy on the reg. My dad (who won’t reveal his age) is older than my mom, but has beautiful wrinkle free skin (my mom does too)! He’s been drinking a glass of red wine every evening for as long as I can remember. The thought of red wine every night makes me wanna gag. I like wine, but not every day so red grapes are what I’ll stick to.

- Handful Organic Spinach
- Olive Oil
- Handful Organic Red Seedless Grapes
- Feta Cheese
- 2 Tablespoons Shredded Coconut
- Lemon Juice
- Take a handful of spinach and drizzle olive oil over it.
- Add grapes, coconut shreds, and feta cheese to the salad.
- Squeeze lemon juice over the salad.
