Happy Sunday! Are you ready for some waffles? Put down the Bisquick… I have thee yummiest, healthy waffle recipe for you to try (sans Bisquick!)
One thing you should know is that I have never really been into waffles–probably because I made the worst waffles–they always came out tough, not moist enough, and lacking taste. But after experimenting with the recipe, and using Pamela’s Baking & Pancake Mix my waffles are now grub worthy! Pamela’s mix is made of brown and white rice flour, almond meal (those with nut allergies steer clear), and is gluten-free. Sound scary? I thought so at first, but now I can’t imagine my waffles and pancakes any other way! The result has been the best tasting–good-for-you waffles I have ever made.
Another recipe alteration I made is adding three eggs instead of one (the extra eggs definitely keep my waffles light), and using melted butter in the mix instead of oil. I use mostly organic ingredients (they taste betta), and you can substitute out whatever you like! For instance I used 2% milk, but you can use whole, and I add cinnamon and vanilla, but you don’t have to.

- 1 1/2 cup Pamela's Baking Mix
- 1 cup milk
- 3 eggs
- 1/4 stick melted butter
- 1/2 teaspoon vanilla
- 1 teaspoon cinnamon
- Grease and heat waffle iron.
- Wisk ingredients together adding the butter last.
- Pour mix into waffle iron.
- Plate and top with your favorite fruits! Enjoy :)
