Greens, Cornbread, Black Eyed Peas

Sooooo… how was New Years Eve??  Hmmmm?? *grabs popcorn*…  Guess what?  I think my crazy NYE antics are over.  I say that because the past two years were spent in the house, in pajamas, and in front of the t.v.  I dunno, maybe I’m just getting old… (umm no!)

So are you among the many who partake in the ritualistic New Years feast of eating greens, black eyed peas, and cornbread?  If so what’s your luck like?  This traditional holiday meal is said to bring good luck, and fortune in the coming year.  I’m not sure where this tradition came from, but it’s probably a southern belief–you know how superstitious we are!  The symbolic meaning of each prepared item in this feast varies from family to family, but the most common thing I’ve heard is that cornbread represents gold, black eyed peas coins, and greens money.  Whether this works or not, this is one delicious tradition I partake in every year.  It’s just something we do.  If I get any richer this year, I will let you know!

Everything used is all natural and/or organically grown:

Money (for the New Year) Greens:
4 Small Bunches Collard greens
2 Small Bunches Mustard greens
1 Small Bunch Kale
2 large Vine Ripened Tomatoes
1 Large Purple Onion
1 (Each) Red, Yellow, Orange, and Green Bell Peppers
1 1/2 Teaspoon Sea Salt (or to taste)
1 Teaspoon  Raw Sugar
1 Teaspoon Black Pepper (or to taste)
1/2 Cup Apple Cider Vinegar
Optional: 1 Green Chili Pepper

Lucky Black Eyed Peas:
1 Bag Dried Black Eyed Peas
2 Smoked Turkey Legs or Wings
1 Large Purple Onion
1 (Each) Green, Red, Yellow Bell Pepper
1 Large Vine Tomato
1/4 Cup Apple Cider Vinegar
1 Teaspoon Sea Salt (or to taste)
1 Teaspoon Black Pepper (or to taste)
1/2 Teaspoon Raw Sugar

Gold Coin Cornbread:
1 Cup All Purpose Flour
1 1/2 Cups Cornmeal
3 Eggs
1 1/2 Cups Milk
1/4 Cup Melted Coconut Oil
2 Tsp Baking Powder
1 Tsp salt

Money (for the New Year) Greens:

Pick greens removing large, tough stems and debris. Wash all greens in cool salted water at least 3 times (more if really dirty) or until water is clear and free of dirt and debris.  Remove from water and cut up in strips until all greens are cut up. Cut up all bell peppers, onion and tomatoes in bowl together.  Add greens to stock pot along with bell peppers, onion and tomatoes.  As these ingredients will make water there is no need to add additional water to the pot.  Add salt, sugar, Black pepper and vinegar to taste.  Add Green Chili to bring heat (optional).  Stir until all ingredients are thoroughly blended and cook on medium heat for 1 hour stirring intermittently until greens are done.  Unfortunately many nutrients will be lost because of the heat, but this is how southern greens are made.

Lucky Black Eyed Peas:

Wash and soak 1 bag of dried Black Eyed Peas one hour.  Wash off excess debris from soaked peas.  Wash smoked turkey and add to medium stock pot half filled with water.  Cook until almost done and water has reduced in pot.  Add peas, onions, Bell peppers and tomatoes to pot. As the tomatoes and peppers will make water there is no need to add additional water to the pot.  Add salt and pepper (to taste), sugar and vinegar.  Stir intermittently adding a little water only if needed. Cook on medium heat for about 1 hour or until peas are done.

Gold Coin Cornbread:

Preheat oven to 355 degrees.  Grease a pan or skillet and set aside.  Mix flour, cornmeal, salt, and baking powder in a bowl.  Add eggs, milk, and melted coconut oil and stir until ingredients are evenly distributed.  Add mix to the greased pan and bake at 355 degrees for 35-40 minutes.
